Our Origins

Shelby's Bakery Started as a Single Stand at a Farmers Market

The owner of Shelby's Bakery, Jenny Truong, has a simple a dream: to make as many people as possible happy with their baked goods.

The prospect of opening a brick and motor location seemed overwhelming at the time, however, so with the help of friends and family, Jenny ran an experiment to see if their baked goods possessed commercial potential. In late 2024, they set up a stand at the Aggieland Farmers Market.

The booth was a success! People loved the pastries on offer! However, in order to make this a career, Jenny knew that they had to move to a permanent location. People would ask all the time about the storefront of Shelby's Bakery!

After a year of successful sales and gaining experience, Jenny decided to take the plunge and fully commit to running a bakery.

Jenny aims not only to sell delicious baked goods but to transform Shelby's Bakery into a neighborhood institution where people of all ages can gather, enjoy the company of others, and take a moment to slow down.

I sincerely hope that I can make you happy.

Meet
Our Mascot!

As a life-long lover of turtles, Jenny knew that incorporating them into the Shelby's Bakery brand was a must. Meet Shelby, a rescue red eared slider that stumbled into Jenny's life!

It felt like a crazy coincidence. Jenny was unsure about getting an actual turtle to serve as the bakery mascot, at first choosing simply to represent Shelby with a drawing.

However, Jenny came unexpectedly into the possession of a turtle soon after signing the lease for the bakery. Considering the timing, it almost seemed as if the universe had given us Shelby!

Almost Too Cute to Eat!

One of the first items developed for sale at Shelby's Bakery was the Turtle macaron. The owner, Jenny, possesses a great affinity and love for turtles, hence why the mascot of the bakery is an anatomically correct turtle named Shelby. Jenny also has pet turtles at home: two red eared sliders named Turtle and Clementine. Jenny's love of turtles inspired the first iteration of the turtle macaron. Rather than using food coloring, the macarons gain their color from matcha powder. These little turtles look almost too cute to eat, but they're waiting to make it to the ocean that is your stomach! The turtle macaron, Shelby's Bakery's flagship item, are more than a cute pastry. They combine two of Jenny's greatest passions, baking and turtles. (No actual turtles were harmed in the making of of the turtle macaron.)
